An apple may seem ordinary, but what happens when we look at it differently? Every year, millions of tons of fruit and vegetables are discarded because they don’t meet aesthetic standards. Apples, in particular, are one of the most wasted fruits in the world, a bruise, a blemish, or the wrong shape and they are wasted.
The right question isn’t just how do we feed more people? But how can we change the mindset to make food valued, respected, and shared?
Ferran and Albert Adrià know something about transformation. When they cooked together at Refettorio Ambrosiano, they didn’t have a planned menu—just a crate of slightly bruised apples, slightly past their prime. Instead of seeing imperfections, Albert saw an opportunity. He transformed those apples into something extraordinary: rice pudding with roasted apple and honey sorbet, a dessert that turned what could have been discarded into something unforgettable.
