Chef Valeria Mosca, forager and Lavazza Brand Ambassador, told us about her experience cooking at Refettorio Ambrosiano and reminded us why Cooking is an Act of Love.

Chef Valeria Mosca, Lavazza Brand Ambassador, shares her passion, the founding principles and values of Food for Soul that founded the first project 5 years ago. Cooking is a philosophy, a cultural bridge, to share a sense of responsibility and raise the consciousness for a better future for all.
“I share many values with Refettorio Ambrosiano. I am a forager and work daily on issues of food sustainability and cooperation with the environment. But I also work to stimulate a change in regard to the linear economic model, which is based on a pattern of production, consumption and waste. At the Refettorio, they work daily to avoid short-term patterns, in that you get to use the food in a more conscious way until the end of its life cycle. And that’s what I work on everyday.
In my kitchen, food waste does not exist. I work mainly with plant.-based materials and sometimes with animals, which I find in nature. As a forager, I always enter nature as a guest, with extreme attention and awareness, so I just harvest what I actually need. This is a law, a rule.

A forager is a person who goes to pristine environments to collect what nature offers. Today I use gastronomy and at times mixing, only as a method. I am interested in cooking in order to speak an easier language to be able to tell people about the subjects I work on, which are food sustainability and cooperation with the environment, in an easier way. What could be easier than eating something? So I decided to start cooking wild food to talk about this, to talk about a synergy, possibly rediscovered , between man and the natural environment.
“The advice I can give to anyone who wants to get closer to a greater awareness on these themes, is to keep eyes open, listen and observe..to rediscover this relationship, this lost synergy. In this way, everything will come by itself, because only in that moment will our attention be maximised, deepened and our sense of responsibility will keep growing, leading us to make different choices.“
